Eggless Coconut Loaf

Ingredients:
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
wheat flour, white, all-purpose, unenriched
sugars, granulated
milk, fluid, 1% fat, without added vitamin a and vitamin d

Directions:
Mix all ingredients till well combined.
Pour into a greased and lined loaf tin.
Bake at 180 degrees celcius for approximate 45 minutes or until a skewer comes out clean.
Optional Extra: I like to add 1 tsp of leamon essence to my mix as well as about one tblsp of lemon zest.
