Homemade Whole Wheat Pancake Mix

Ingredients:
oats
wheat flour, white, all-purpose, unenriched
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table

Directions:
Combine all ingredients in a large bowl and stir until well combined.
Store in an airtight container in the pantry or freezer.
Makes about 3 cups of pancake mix.
Can easily be doubled!
To make about 10 pancakes: Combine 1 1/2 cups of pancake mix with 1 1/4 cup milk, 1 egg and 1/2 teaspoon vanilla.
Mix until well combined.
Add chopped fruit or chocolate chips if desired.
Pour about 1/4 cup batter onto a hot greased griddle.
Cook 3-4 minutes, or until tiny bubbles form on top.
Flip and cook an additional 3-4 minutes or until golden brown.
Serve with warm maple syrup and desired toppings.
