Cranberry Orange Banana Bread

Ingredients:
wheat flour, white, all-purpose, unenriched
wheat flour, white, all-purpose, unenriched
sugars, granulated
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
egg substitute, powder
applesauce, canned, unsweetened, without added ascorbic acid (includes usda commodity)
orange juice, raw
vanilla extract
orange juice, raw
bananas, raw
cranberries, dried, sweetened

Directions:
1.
In a large bowl, mix together the flours, sugar, baking powder and salt until well combined.
Set aside.

In a separate bowl, mix eggs, applesauce, orange extract, vanilla extract, orange zest and bananas.

Stir banana mixture into the flour mixture.
Then add cranberries.
4.
Stir carefully.
5.
Pour the batter into a greased loaf pan and bake for approximately one hour at 350 degrees F. Or you can use 3 mini loaf pans and bake for 30 minutes.
6.
Bread is done when a toothpick inserted into the loaf comes out clean.
Makes 18 slices, approximately 6 slices per mini loaf.
