Reduced Fat Chocolate Zucchini Bread

Ingredients:
squash, summer, zucchini, includes skin, raw
wheat flour, white, all-purpose, unenriched
sugars, granulated
butter, without salt
vanilla extract
leavening agents, baking powder, double-acting, sodium aluminum sulfate
egg substitute, powder
applesauce, canned, unsweetened, without added ascorbic acid (includes usda commodity)
cocoa, dry powder, unsweetened
salt, table
spices, cinnamon, ground

Directions:
In a mixing bowl, beat egg beaters, apple sauce, butter, sugar and vanilla.
Stir in zucchini.
Combine dry ingredients and mix well.
Pour into two greased 8x4x3-inch loaf pans.
Bake at 350F for 1 hour or until bread tests done.
Makes 2 loaves.
