Vegan Pumpkin Zucchini Bread

Ingredients:
applesauce, canned, unsweetened, without added ascorbic acid (includes usda commodity)
sugars, granulated
pumpkin, raw
shortening, vegetable, household, composite
vanilla extract
wheat flour, white, all-purpose, unenriched
leavening agents, baking soda
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
spices, cinnamon, ground
spices, nutmeg, ground
spices, cloves, ground
squash, summer, zucchini, includes skin, raw
nuts, walnuts, english

Directions:

In a mixing bowl, combine applesauce and sugar.
Add pumpkin, shortening and vanilla.
Combine dry ingredients; gradually add the dry mixture into pumpkin mixture and mix well.
Stir in zucchini and nuts.

Pour into two greased and floured 9-inch x 5-inch x 3-inch loaf pans.

Bake at 350 degrees F for 45-50 minutes or until breads test done.
Cool in pans 10 minutes.
Remove to a wire rack.
