Raisin, Rice and Carrot Salad
Ingredients:
salad dressing, mayonnaise, regular
milk, buttermilk, fluid, cultured, lowfat
vinegar, cider
honey
rice, white, long-grain, regular, unenriched, cooked without salt
carrots, raw
onions, spring or scallions (includes tops and bulb), raw
raisins, seeded
seeds, sunflower seed kernels, dried
Directions:
Measure mayonnaise into a medium bowl.
Slowly add buttermilk, whisking until smooth.
Whisk in vinegar and honey.
Stir in rice, carrots, onion, raisins and sunflower seeds if using; mix well.
Chill thoroughly, preferably at least 24 hours if possible.
