Moroccan Chicken Salad
Ingredients:
oil, canola
chicken, broiler or fryers, breast, skinless, boneless, meat only, raw
salt, table
spices, pepper, black
spices, cinnamon, ground
spices, cloves, ground
spices, nutmeg, ground
spices, pepper, red or cayenne
apricots, dried, sulfured, uncooked
nuts, almonds
salad dressing, mayonnaise, regular
lemon juice, raw
spices, coriander seed
Directions:
In a fry pan or skillet on medium high heat, add oil.
Once hot, add chicken, salt and pepper.
Cook 1012 minutes or until no longer pink.
Transfer to a bowl and let cool.
In a small bowl, add cinnamon, cloves, nutmeg, and cayenne pepper.
Set aside.
When chicken has cooled, add apricots, almonds, mayonnaise, lemon juice, and coriander.
Stir well.
Add seasonings and combine well.
We love this served on a bed of greens.
You can use any type of bread and create a sandwich if you desire with your favorite sandwich fixins.
Either way, this is so flavorful and will become your new favorite chicken salad!
