Halibut and Shellfish Soup
1 tsp olive oil
2 chopped shallots
2 cloves of garlic
3 medium diced tomatoes
4 oz dry white Wine
1 cup clam juice
2 cups vegetable stock
3/4 lb halibut filet, pores and skin taken off minimize into higher sections
1 lb shrimp, peeled deveined fresh new shrimp
1 dozen littleneck clams
pinch of saffron
1/4 cup fresh new chopped parsley
crusty bread for serving upon the facet (optional)
Instructions:
Insert olive oil to a heavy large pot; above medium warm sautée shallots and garlic right up until translucent. Insert the tomatoes, Wine, clam juice and the bone towards the halibut if you include one. Insert vegetable stock, saffron, clean thyme and stir.
Insert the clams; address and cook 2 minutes, increase the shrimp and fish and cook and further 3 to 5 minutes, or until eventually the shrimp turns red and the clams open. Remove bone and provide with a crusty bread to dip into the juice.
