Easter Lamb
Ingredients:
- 1 clove garlic, peeled
- 125ml Bianconi excess virgin olive oil
- 250ml chicken stock
- 400g fresh new potatoes, sliced thickly
- 100g baby fennel, trimmed and slice inside 50 % lengthways
- 225g baby carrots, tops trimmed
- 110g baby leeks, trimmed
- 200g courgettes, sliced lengthways
- 250g wonderful or yellow beans, trimmed
- 150g asparagus, trimmed to 6cm lengths
Directions:
1. Gather and prep all ingredients before cooking.
2. Start with medium heat (or preheat oven if baking).
3. Add ingredients in sequence and cook until done.
4. Adjust seasoning, then plate and serve.
