Lazy Daisy Cake
Lazy Daisy Cake
Ingredients:
2 eggs
1 teaspoon vanilla
1 cup sugar
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1 tablespoon butter
Cooking spray
Topping:
12 tablespoons brown sugar
6 tablespoons melted butter
4 tablespoons cream
1 cup flaked coconut
1 cup chopped pecans or walnuts
Directions:
1. Preheat the oven to 350°F. Heat the milk and butter in the microwave until the butter is melted. Add the vanilla to the milk mixture.
2. Beat the eggs until mixed; add the sugar, flour, baking powder, salt and milk mixture and beat until smooth.
3. Pour into a 9 x 13-inch pan sprayed with cooking spray and bake 25 minutes or until a knife inserted in the middle comes out clean.
4. For the topping: Melt the butter in a small saucepan. Stir in the brown sugar, cream, nuts and coconut. Bring to a boil and boil for 1 minute, stirring constantly.
5. Spread on top of the baked cake and put under the broiler until light golden brown.
