Microwave Chocolate Bar Pie
Ingredients:
Crust:
1/2 cup butter or margarine
1 cup granulated sugar
1 egg
1 teaspoon vanilla
1 1/4 cups unsifted all-purpose flour
1/2 cup cocoa
3/4 teaspoon baking soda
1/4 teaspoon salt
Filling:
1/2 pound milk chocolate bar
1/3 cup milk
1 1/2 cups miniature marshmallows
1 cup heavy cream
Directions:
1. Cream the butter and sugar in a large bowl until light and fluffy. Add the egg and vanilla; beat well.
2. In a separate bowl, combine the flour, cocoa, baking soda and salt; add to the creamed mixture. Shape into two 1 1/2-inch-thick rolls. Wrap in waxed paper and plastic wrap; chill several hours or overnight.
3. Cut 1 roll into 1/8-inch slices; arrange with edges barely touching on the bottom and up the sides of a greased 9-inch glass pie plate. Microwave on medium (1/2 power) for 5 to 6 minutes, turning the plate 1/4 turn every 2 minutes.
4. For the filling: Break the chocolate bar into pieces and place in a glass bowl. Add the milk and marshmallows. Microwave on high until the chocolate and marshmallows are melted and the mixture is thick and smooth, about 3 to 4 minutes; cool.
5. Whip the cream until stiff; fold into the chocolate mixture. Spoon into the crust. Cover and chill.
Tip:
The leftover dough can be frozen or sliced 1/4 inch thick for cookies. Place 10 cookies on waxed paper in a circle and microwave on medium (1/2 power) until just set, 4 to 5 minutes, turning 1/4 turn every 2 minutes. The cookies will continue to cook after removal from the microwave. Cool.
