Old-Fashioned Ice Cream Sodas

Serves 1 each

Ingredients:
Black-and-White:
2 tablespoons chocolate syrup
Seltzer water
1 scoop vanilla ice cream
Canary Island Special:
2 tablespoons vanilla syrup
Seltzer water
1 scoop chocolate ice cream
Black Cow:
1 tablespoon chocolate syrup
Root beer (use cola for a Brown Cow)
1 scoop vanilla ice cream
Strawberry Soda:
1/4 cup strawberry syrup
Splash of milk
Seltzer water
1 scoop vanilla or strawberry ice cream
Hoboken:
1/2 cup pineapple syrup
Splash of milk
Seltzer water
1 scoop chocolate ice cream
Topping:
Whipped cream (skip for the Black Cow)

Directions:
1. Put the syrup (and milk, if using) in the bottom of a large, tall glass.
2. Add seltzer (or root beer), stirring as you pour, to within 2 inches of the rim.
3. Add a large scoop of very firm ice cream so it straddles the rim but is still in the soda, to create a foamy head.
4. Top with whipped cream.
