Grilled Salmon in Lettuce with Mustard Sauce

Ingredients:
4 (4- to 6-ounce) salmon fillets
3 tablespoons lemon juice
2 tablespoons white wine
4 teaspoons olive oil
3 tablespoons capers
1/4 teaspoon dry mustard
Salt
16 green leaf lettuce leaves

Mustard Sauce:
2 tablespoons butter or margarine
1 1/2 teaspoons flour
1/4 cup vinegar
1/4 cup boiling water
1/2 bouillon cube
1/4 cup dry mustard
1 tablespoon sugar
1 egg, beaten

Directions:
1. Rinse the salmon and pat dry. Combine the lemon juice, wine, oil, capers and 1/4 teaspoon mustard; season with salt. Marinate the salmon 30 minutes, turning once. Reserve the marinade.
2. Blanch the lettuce 5 seconds and drain well.
3. For each bundle, overlap 2 leaves at the stem ends, spoon on about 2 teaspoons marinade, add a fillet and 1-2 teaspoons more marinade with some capers. Roll up, cover with 2 more leaves, tuck the edges under and tie with string.
4. For the sauce, blend the butter and flour in a double boiler until smooth. Add the vinegar, boiling water, bouillon, mustard, sugar and egg. Cook over hot water, stirring, until thick, about 10 minutes. Keep warm.
5. Grill the bundles on a well-greased grill 4-5 inches from hot coals 5-6 minutes per side.
6. Remove the string and serve with the mustard sauce.
