Boy Scout Foil Potatoes

Boy Scout Foil Potatoes

Ingredients:
Potato
Carrot
Small onion
Salt and pepper
Margarine
1 tablespoon water

Directions:
1. Slice the potato 1/4 inch thick. Peel and slice the onion and carrot.
2. Place in the middle of a sheet of foil with salt, pepper, a dollop of margarine and the water.
3. Seal with a drugstore wrap (below) and place on the coals 45 minutes to 1 hour.

Tip:
Drugstore wrap: use 2 pieces of light foil or 1 of heavy-duty foil, twice the circumference of the food. Put the food in the middle, shiny side in (food must be moist, or add 4 tablespoons liquid). Bring opposite sides together and fold down in 1/2-inch folds to the food. Flatten the top, fold in the corners of the open ends and roll the ends in small folds toward the center so the steam stays in.
