Traditional Caramel Syrup

Ingredients:
2 cups sugar
1 cup boiling water

Directions:
1. Melt the sugar in a large, high-sided saucepan over medium heat. Stir only after you
see good melting at the edges and continue to cook until amber brown.
2. Stirring all the while, pour in the boiling water. The syrup will froth and foam—be
careful! Keep stirring over the heat until the sugar melts again. Remove the pan from
the heat and cool to room temperature. Pour into a glass jar or container, seal, and
refrigerate for up to 2 months.
