TURMERIC
Turmeric is the spice that gives all curry powder its distinct yellow-orange hue. Turmeric has an astringent
yet earthy flavor, akin to mustard or horseradish but more mellow. Its strong color will dye any food that it is
sprinkled on. You might also find fresh turmeric at specialty grocery stores, where it looks similar to its
cousin, ginger.
Ras El Hanout
The Arabic phrase ras el hanout means “top of the shop” and refers to a
spice owner’s special blend of his best spices. It’s an essential Moroccan
spice mix and some versions have upward of 20 or even 30 ingredients.
