Cage Free Paleo Chocolate Chip Cookies
Ingredients:
3 cups almond flour
1 teaspoon baking soda
2 large, cage free, organic eggs
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
1/2 cup coconut oil
1 cup bittersweet chocolate chips
Directions:
Preheat oven to 375 degrees.
Sift together the dry ingredients in a medium mixing bowl. Beat the eggs,
maple syrup, vanilla and coconut oil with a hand mixer until well combined.
Fold in the chocolate chips.
On a parchment-lined baking sheet, drop tablespoon-sized balls of cookie
dough about 2 inches apart. Bake for 15 minutes. Remove from oven, cool and
serve.
Gingerbread Cookies
Makes 1 dozen
In this Paleo version of the classic spiced cookie, you’re getting no refined sugar
and no grains while enjoying a heavily spiced cookie that makes a perfect treat all
year round. Molasses is the key to getting part of the classic flavor in these treats,
but if you wish to skip it, you can use maple syrup instead.
