Gluten Free Pineapple Bars

Gluten Free Pineapple Bars

Ingredients:
½ cup gluten-free oat flour
½ cup almond flour
3 tablespoons coconut oil
4 tablespoons honey, divided
⅛ teaspoon sea salt
1 can (21 ounces) crushed pineapple in juice (do not drain)
2 tablespoons cornstarch
3 large eggs
1 teaspoon grated orange zest

Directions:
Preheat the oven to 350°F. Line an 8" × 8" baking pan with parchment paper, leaving an overhang on 2
opposite sides.
In a mini food processor, combine the oat flour, almond flour, oil, 1 tablespoon of the honey, and salt.
Process until the mixture begins to stick together. Press into the bottom of the baking pan and bake for
10 to 15 minutes, or until partially baked and golden brown.
In a medium bowl, mix the pineapple and cornstarch. Add the eggs, orange zest, and remaining 3
tablespoons honey and mix well. Carefully pour over the partially baked crust and bake for 35 to 45
minutes, or until a small knife inserted near the center of the pan comes out clean. Cool in the pan on a
rack. Refrigerate for 2 to 3 hours. Cut into bars.
Makes approximately 9 bars
Cherry-Almond Bars
These bars are flavored with raw almonds and dried cherries as well as a generous amount of
coconut.
