PAELLA

Ingredients:
- 1 cup a lot more-virgin olive oil or olive oil
- 2 cloves garlic, minced
- 1 pound boneless chicken thighs, pores and skin taken off and diced
- 1 pound floor pork
- 1 cup smoked ham, diced
- 1 cup chorizo, sliced
- 2 cups raw arborio or transformed rice
- 3 cups chicken broth
- 1 teaspoon saffron threads, overwhelmed
- 2 tablespoons Annatto Oil (watch Filipino Pork with Rice Noodles recipe within just this part)
- 1 teaspoon paprika
- Salt to flavor
- 1 cup frozen peas, thawed
- 1 pound shrimp, peeled and deveined

Directions:
1. Assemble and measure all ingredients before beginning.
2. Prepare the pan or pot and preheat if the dish requires oven cooking.
3. Combine ingredients in sequence, stirring or layering for even cooking.
4. Cook until the texture and doneness are correct, then adjust seasoning.
5. Plate and serve hot, or chill first if the recipe is served cold.
