Ripe Avocado Chocolate Ice Cream
Ingredients:
1 large ripe avocado
1 cup full-fat canned coconut milk
1 cup heavy cream
1 teaspoon vanilla extract
1 cup unsweetened cocoa powder
1 cup granulated erythritol

This is a basic chocolate ice cream recipe that you can make your own by adding your own mix-ins. Try
unsweetened coconut flakes, dark chocolate shavings, or chopped peanuts.
1. Cut avocado in half and scoop out contents into a medium bowl. Add coconut milk,
heavy cream, and vanilla extract to the bowl. Beat mixture until smooth.
2. Add cocoa powder and granulated erythritol and beat until smooth.
3. Store in a metal bowl in the refrigerator for 6–12 hours, then put mixture into an ice-
cream maker, following manufacturer’s instructions for use.
4. Serve immediately or store in the freezer until ready to serve.
Snickerdoodle Cookies
Change the flavor of these cookies by rolling them in pumpkin pie spice instead of
cinnamon before cooking.
