Garlic Creamed Spinach

Ingredients:
4 tablespoons butter
3 cloves garlic, minced

Directions:
1⁄ cup minced shallots

1 (10-ounce) package frozen spinach, thawed
1⁄ cup heavy cream

1⁄ cup grated Parmesan cheese

1⁄ cup grated Asiago cheese

1⁄ teaspoon salt

1⁄ teaspoon black pepper

Sweet Shallots
Shallots belong to the genus Allium, the same family that claims onions and garlic. They resemble onions,
but their flavor is richer, sweeter, and more potent, so you need less of them when cooking. If you want to
substitute onion for shallots in this recipe, double the amount of onion you use.
1. Heat butter over medium-high heat and add garlic and shallots. Sauté for 3 minutes.
Add thawed and drained spinach and stir in heavy cream.
2. Stir in Parmesan and Asiago cheeses and continue stirring until melted. Season with
salt and pepper. Serve hot.
Mexican Cauliflower “Rice”
The fire-roasted tomatoes give this dish a slightly spicy, smoky flavor, but if you
can’t find them, you can use regular diced tomatoes in their place.
