Baby Spinach, Feta, and Apple Salad
Baby Spinach, Feta, and Apple Salad
Ingredients:
4 cups baby spinach
8 ounces cooked chicken, cubed
Directions:
1⁄ cup chopped red onion

1⁄ cup crumbled feta cheese
2
1⁄ small Granny Smith apple, diced
2
1⁄ cup toasted pine nuts
2
1⁄ cup Ranch Dressing (see recipe in Chapter 9)

An Apple a Day
Apples are rich in quercetin and other flavonoids that slow digestion and help prevent a rapid spike in
blood sugar levels. One cup of chopped apples contains 17 grams of carbohydrates, 13 of which come
from natural sugars.
Combine all ingredients in a bowl and toss to coat. Serve immediately.
Chef Salad
Meat and cheese are the basis of a chef salad. Although this recipe calls for ham
and turkey and Swiss and Cheddar, you can use any combination you’d like. Try
adding roast beef and some pepper jack for a little kick.
