Hard Cobb Salad
Hard Cobb Salad
Ingredients:
8 cups chopped romaine lettuce
16 cherry tomatoes
1 cup diced sugar-free ham
4 large hard-boiled eggs, sliced
2 large avocados, diced
1 cup feta cheese crumbles
4 slices cooked sugar-free bacon, crumbled
Directions:
1/ cup Ranch Dressing (see recipe in Chapter 9)

1. Chop romaine lettuce and put in a large bowl. Cut cherry tomatoes in half lengthwise
and put on top of lettuce. Add ham, eggs, avocados, feta cheese, and crumbled bacon.
Toss to distribute.
2. Top with ranch dressing and toss until coated. Serve immediately.
Monkey Salad
Traditional monkey salad uses sliced bananas as a base, and that’s where the
“monkey” name comes from. Because bananas are high in carbohydrates, this
version leaves them out, but the flavor is so good you won’t miss them.
Ingredients

1⁄ cup unsweetened coconut flakes

1⁄ cup raw, unsalted cashews

1⁄ cup raw, unsalted almonds

1⁄ cup 90% dark chocolate shavings

Monkey salad is the perfect sweet and satisfying treat. It’s loaded with healthy fats that help keep you full
between meals, and it’s so easy to take on the go.
1. Melt butter in a medium skillet over medium heat. Add coconut flakes and sauté until
lightly browned, 3–4 minutes.
2. Add cashews and almonds and sauté for 2 minutes. Remove from heat and sprinkle
with dark chocolate shavings. Serve immediately.
