Waxy Icelandic Sugar-Glazed Potatoes

Ingredients:
2 pounds waxy potatoes
4 tablespoons sugar
3 tablespoons butter

Directions:
1. Place a large pan of water over high heat. Boil the potatoes whole for 20
minutes. When you can insert a knife to the middle of the potato, it is ready.
Remove them to cool; reserve 1⁄ cup of the cooking water. Peel skins and cut into

thick slices.
2. Place a skillet over medium heat. Add the sugar and butter. If the sugar starts to
smoke, lower the temperature. Whisk them together. Add 1–3 tablespoons of
water that the potatoes were boiled in.
3. Place the potatoes in the skillet one at a time and stir to coat. If the mixture won’t
coat, increase the temperature slightly and add 1–2 tablespoons of water. When
all of the potatoes are coated in sugar and warm, serve.

It’s best to use potatoes that are no larger than 2" across for this dish.
