Homestyle Dressing
Homestyle Dressing
Ingredients:
½ cup toasted sesame oil
3 tablespoons brown rice vinegar
2 tablespoons maple syrup
1 tablespoon Dijon mustard
2 teaspoons salt
Directions:
At Home: Combine seaweed and chives in a small plastic bag, or add chives to the
dressing. Combine dressing ingredients and stir with a whisk. Carry in a plastic
container inside a plastic ziplock bag. Carry noodles separately.
In Camp: Soak seaweed and chives for 7 minutes in enough water to cover them.
Meanwhile, cook the soba 5–7 minutes in 4 cups of salted boiling water and drain.
Combine soba, drained seaweed and chives, and dressing and mix well to coat the
noodles. May be eaten warm or cool.
Green Noodle Salad
serves 2
It’s a good idea to make this when you have your breakfast fire going; just let it sit in
the pot until lunch or dinner. It’s filling and is very good for dinner, especially while
you wait for soup to cook.
