Powder Irish Soda Bread

Ingredients:
¾ cup whole wheat flour
2 tablespoons buttermilk powder
½ teaspoon baking soda
½ teaspoon baking powder

Directions:
At Home: Combine ingredients in a ziplock plastic bag.
In Camp: Empty contents of bag into a bowl or pot. Add ½ cup of water and mix well.
Place the dough in an oiled, thick-bottomed pan, or use a heat diffuser. Use the stove’s
lowest heat, turning dough after its bottom has firmed up. Turn it several times. A lid
on the pan will make the bread cook a little faster. The bread will take about 20
minutes to cook and will sound hollow when you tap the crust.
Variations: Use half unbleached white, half whole wheat flour; add 1 tablespoon
dried mixed herbs; add a handful of dried fruit or raisins; add zest from half a lemon
or add ¼ teaspoon caraway seeds.
Whole Wheat Bread
makes 1 loaf or 12 scones
This is a luxury bread for long trips; save leftovers for lunch, if you can stop eating it.
The bread will rise as you hike.
1½ cups whole wheat flour
¼ cup raw wheat germ
pinch of salt
