Grated Whole Cheese Cookies

Ingredients:
½ pound medium cheddar cheese, grated
1 cup whole wheat flour
3 tablespoons olive oil
¼ teaspoon salt

Directions:
dash of cayenne
3–4 tablespoons milk
⅓ cup finely chopped pecans or walnuts (or save
whole to put on top)
Mix grated cheese, flour, oil, salt, and cayenne until they have an even, crumbly
texture. Add milk and chopped nuts and knead into a large ball. Form balls about 1
inch in diameter and mash them between your palms. Place on an oiled cookie sheet. If
you didn’t add nuts to the mixture, place a half nut meat into the center top of each
cookie. Bake at 350°F for 20 minutes.

This is an Australian recipe from World War I, when Australian women baked these
biscuits (cookies) to send to their men on the beaches of Gallipoli. They were still
fresh after an 8-week boat trip! Anzac stands for Australian–New Zealand Army
Corps.
