Coarse Finely Raspberry Jam
Coarse Finely Raspberry Jam
Ingredients:
2 ¼ cups of fresh raspberries
1 cup + 2 tbsp. of sugar
1 1/8 tsp. of fresh lemon juice
Pinch of coarse salt
½ tsp. of finely grated orange zest, divided into two
Method of
Directions:
1. Freeze several plates in your freezer.
2. Stir everything except half of the orange zest into a large pot.
3. Boil while stirring so that the sugar dissolves, also mash lightly with a potato masher.
Skim foam off of surface.
4. Continue cooking; intensify stirring as jam gets thicker until it is as thick as very
loose jelly, this should take about 8-9 minutes. Take off of heat.
5. Take a plate from the freezer and place a spoonful of jam onto it. Return this to the
freezer for another 1-2 minutes; then, poke it with your finger. It should keep shape;
if it spreads then it’s too thin, bring back to the pot and continue boiling; check every
minute to see if the thickness is right.
6. Strain half of the jam through a fine sieve into a bowl and remove seeds. Return to
the pot and add the rest of the zest.
7. Boil and then remove from heat.
8. Set aside to cool before storing or using.

This layer cake has an irresistible filling that will make you want to taste it again and
again. But you will have to prepare it just before serving to ensure the best possible taste.
Yield: Makes 12 Servings
