Frozen Pitted Cherries Jubilee
Ingredients:
2 pounds fresh or frozen pitted bing cherries
¼ cup sugar
1 tablespoon cornstarch
¼ cup cherry brandy
¼ cup brandy
1 quart Vanilla-Almond Ice Cream ()
Directions:
Put the cherries, sugar, and cornstarch into a medium saucepan over medium heat.
Cook, stirring constantly, until the sugar is completely dissolved. Bring to a boil and
cook for 2 minutes.
Put the cherry brandy and regular brandy in a separate small saucepan over
medium-high heat and heat until it begins to bubble slightly. Turn off the heat source or
remove the pan from heat, light a match, and wave the match over the pan until the
brandy lights. Lightly shake the pan to distribute the flame. The flame should subside
on its own after about 30 seconds; if it doesn’t, simply cover the saucepan with a lid.
Add the brandy mixture to the cherry mixture. Spoon into serving bowls with ice
cream and serve immediately.
