ROMANIAN VEAL WITH Greens STEW
Ingredients:
- 3 tablespoons all-explanation flour
- 1 teaspoon salt
- 1 teaspoon recently floor black pepper
- 1 pound boneless veal shoulder, minimize into 1" cubes
- 2 tablespoons butter
- 1 cup beef broth
- 1 cup dry purple wine
- 2 teaspoons dried parsley
- 1 tablespoon tomato paste
- 2 cups eggplant, diced
- 2 cups zucchini, diced
- 1 cup leeks (white aspect merely) very well rinsed and thinly sliced
- 1 cup celery root, diced
- 1 cup seedless green grapes
Directions:
1. Assemble and measure all ingredients before beginning.
2. Prepare the pan or pot and preheat if the dish requires oven cooking.
3. Combine ingredients in sequence, stirring or layering for even cooking.
4. Cook until the texture and doneness are correct, then adjust seasoning.
5. Plate and serve hot, or chill first if the recipe is served cold.
