Glazed Meatloaf

Glazed Meatloaf

Yield: 4 servings

Ingredients:
Croutons
Black pepper
Cayenne pepper
Chili powder
Thyme
Onion
Carrot
Garlic
Red pepper
Ground sirloin
Ground chuck
Kosher salt
Egg

Glaze:
1/2 cup catsup
1 tablespoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey

Directions:
1) Heat oven to 325 degrees F.
2) In a food processor, combine the croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until fine. Place in a large bowl.
3) Combine the onion, carrot, garlic, and red pepper in the food processor. Pulse until finely chopped but not pureed.
4) Combine the vegetable mixture, ground sirloin, and ground chuck with the crumb mixture. Season with kosher salt.
5) Add the egg and combine thoroughly, without squeezing the meat.
6) Pack the mixture into a 10-inch loaf pan to mold the shape.
7) Turn the meatloaf out onto the center of a parchment-lined baking sheet. Insert a temperature probe at a 45 degree angle into the top, not touching the tray. Set the probe for 155 degrees.
8) Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey.
9) Brush the glaze onto the meatloaf after it has cooked about 10 minutes. Bake until the probe reaches 155 degrees.
