Ingredients:
1 Tbsp unsalted butter, cut into small pieces
1 Tbsp canola oil
3 Tbsp frozen orange juice concentrate
1 Tbsp chopped slivered almonds
Directions:
1. Preheat oven to 375°F (190°C). Coat 8-in (20 cm) square baking dish with cooking spray.
2. Combine rhubarb, blackberries, granulated sugar, and cornstarch in baking dish. Toss to mix.
Cover with foil and bake for 20 minutes.
3. Meanwhile, in medium bowl, mix flour, oats, brown sugar, cinnamon, and salt with fork. Add
butter and crumble with pastry blender or your fingertips until well blended. Add oil and stir to coat.
Add orange juice concentrate and stir until dry ingredients are moistened.
4. When crumble has baked for 20 minutes, sprinkle flour mixture evenly over fruit. Top with
almonds. Bake, uncovered, for 20 to 30 minutes, or until fruit is bubbly and tender and topping is
lightly browned. Let cool for at least 10 minutes before serving warm or at room temperature.
