Diet Purpose I. FRIDAY’S

Ingredients:
4 tablespoons (¼ cup) diet margarine
¼ cup all-purpose flour
2 cups skim milk
1 cup chicken broth
1 teaspoon salt
¼ teaspoon ground nutmeg
1 teaspoon salt
¼ teaspoon white pepper
½ cup grated low-fat mozzarella cheese
¼ cup grated low-fat Colby cheese

Directions:
1. Bake the potatoes in advance in a 400°F oven until tender, about 1 hour. Let
cool long enough to be able to make neat slices, about 30 minutes. Then slice into
½-inch-thick rounds.
2. To make the sauce, melt the margarine in a saucepan and whisk in the flour,
stirring constantly, until the paste is smooth and a very light brown. Gradually
add the milk and chicken broth, whisking, and season with the salt and nutmeg.
Lower the heat and simmer for 15 minutes, or until the sauce thickens.
3. Preheat the oven to 300°F.
4. Put the sliced potatoes in a large bowl and season with the salt and white
pepper. Add the cheeses, then fold in the warm béchamel sauce. Transfer the
mixture to a 13 by 9-inch baking dish and cover with foil.
5. Bake until the cheeses melt, then remove the foil and allow the top to get
bubbly and brown. Serve hot.
