Heavy Powdered Topping
Heavy Powdered Topping
Ingredients:
1 cup heavy cream
1 tablespoon powdered sugar
1 teaspoon vanilla extract
Directions:
1. Preheat the oven to 350°F.
2. To make the piecrust, put the graham cracker crumbs in the bowl of a food
processor and add the melted butter and granulated sugar.
3. Pulse the mixture until it is just combined, then press it into a lightly buttered
9-inch pie pan. Bring the mixture all the way up the sides, and make the top edge
neat and even.
4. Bake the crust in the hot oven for 8 to 10 minutes, until golden brown. Let it
cool on a wire rack but leave the oven on.
5. To make the Key lime filling, combine the egg yolks and lime zest. With an
electric mixer, beat until the mixture is light and foamy, about 5 minutes.
Gradually beat in the condensed milk and whip until thickened. Reduce the speed
of the mixer and gradually add the lime juice, mixing just until blended.
6. Pour the mixture into the prepared piecrust and bake in the hot oven for 10
minutes, or until the custard is just set.
7. Let cool at room temperature on a wire rack, then refrigerate. Freeze for 10 to
15 minutes just before serving.
8. To make the topping, whip the heavy cream until soft peaks form. Add the
powdered sugar and vanilla extract. Beat until the peaks are stiff.
9. Top each slice of pie with a large dollop of the whipped cream and serve.
