Yolk Heavy Chocolate Mousse

Ingredients:
4 egg yolks
4 tablespoons sugar
2 cups heavy cream

Directions:
1½ cups chopped bittersweet chocolate, melted and cooled
1 tablespoon vanilla extract
Fresh raspberries and mint leaves, for garnish
1. In a medium saucepan, whisk the egg yolks, 2 tablespoons of the sugar, and ¾ cup
of the cream. When the mixture is smooth, place the saucepan over medium heat and
cook the mixture, stirring constantly, until it thickens. Do not allow the mixture to boil.
2. Remove the saucepan from the heat. Whisk in the chocolate and the vanilla extract.
Transfer it to a large serving bowl, cover with plastic wrap, and refrigerate for about
1 hour.
3. In a medium mixing bowl, using a hand-held electric mixer set on medium speed,
beat the remaining 1¼ cup heavy cream with the remaining 2 tablespoons sugar until
soft peaks form. Fold the whipped cream into the chocolate mixture. Cover and chill.
4. When ready to serve, spoon the mousse into serving bowls and garnish each bowl
with raspberries and mint leaves.
