Alaska Sourdough Starter
Ingredients:
1 package yeast
2 1/4 cups warm water, divided
2 tablespoons sugar
1 tablespoon vinegar
1 teaspoon salt
2 cups bread flour
Directions:
1. Dissolve the yeast in 1/4 cup warm water. Add the sugar, vinegar, salt and flour.
2. Add the remaining water until a creamy batter forms.
3. Place in a glass bowl, cover and let sit until it starts to ferment, about 3 days. It will take on a powerful boozy smell.
4. Stir again until creamy and measure out what your recipe calls for.
5. Replenish the starter with equal amounts of flour and water. Store in the refrigerator and bring to room temperature before using.
Note:
It can take about 1 1/2 months for the starter to become really sour.
