Rich Hollandaise Sauce
Rich Hollandaise Sauce
Ingredients:
1/2 cup butter
2 egg yolks
1/2 tablespoon vinegar or 1 tablespoon lemon juice
1/4 teaspoon salt
Few grains cayenne
1/2 teaspoon hot water and 1/2 tablespoon heavy cream, optional
Directions:
1. Wash the butter and divide into three pieces.
2. Put one piece in a saucepan with the vinegar or lemon juice and egg yolks. Set in a larger pan of boiling water and stir constantly with a wire whisk.
3. Add the second piece of butter, and as it thickens, the third.
4. Remove from the heat and add the salt and cayenne. If left over the heat a moment too long, it will separate.
5. For a richer sauce, add the hot water and cream.
Variations:
For anchovy sauce, season with anchovy sauce. For horseradish hollandaise, add 1/4 cup grated horseradish root.
