Chipotle Bread Crumb Topping
Ingredients:
1 tablespoon butter, melted
2 tablespoons panko (Japanese

1. Melt the butter in a large saucepan over medium/low heat. Add the
jalapeño and green onion and sweat (sauté slowly) for 5 minutes.You want
the jalapeño and green onion to only soften, not turn brown.
2. Whisk in the flour and continue to cook over medium/low heat for another
5 minutes.
3. Add the milk, cream, cheese, salt, and ground chipotle. Continue cooking
over medium/low heat for 10 to 15 minutes, stirring often, until thick.
4. While cheese sauce is thickening, cook the pasta in 6 to 8 cups of boiling
water for 11 minutes, or until soft.
5. Make the bread crumb topping by stirring ¼ teaspoon ground chipotle and
a dash of salt into the 1 tablespoon of melted butter. Measure 1 teaspoon of
this mixture into the 2 tablespoons of panko, and stir until the panko is well
coated. You can toss out the rest of the chipotle butter, or use it for another
dish.
6. Drain the pasta when it’s done, then combine it with the cheese sauce.
Spoon the macaroni and cheese into a serving dish, then top it with the
chipotle bread crumb topping, and sprinkle with minced parsley.
• SERVES 4 TO 6 AS A SIDE DISH.

MENU DESCRIPTION: “Our house specialty with cream, jalapeños, and cheddar
cheese.”
These slightly spicy au gratin potatoes are cooked at a low heat several hours in
advance of the dinner house’s evening opening. When an order for the signature side
comes into the kitchen a generous serving of the potatoes is portioned out, topped with
grated sharp cheddar cheese, and baked again at a higher temperature until
browned.The real trick here is to slice the potatoes very thin— of an inch to be
exact—and the only way to do that is with a slicing contraption such as a mandoline.
The rest of the prep involves making a basic béchamel sauce using cream, and then
carefully layering the sauce and sliced potatoes in the baking dish. In the restaurant the
potatoes are baked for 2 hours and then chilled, so this can be a great make-ahead dish
for entertaining. Although you can also serve the potatoes immediately by topping them
with cheese, cranking up the oven, and heading straight into the second baking step.
