For the Quick Pickled Cukes
For the Quick Pickled Cukes
Ingredients:
½ cup white vinegar
1 tablespoon organic cane sugar
¼ teaspoon crushed red pepper flakes
⅛ teaspoon kosher salt
1 whole cucumber, very thinly sliced
Directions:
To make the cukes: Combine the vinegar, sugar, pepper flakes, and salt in a bowl; add the
cucumber slices. Cover with plastic wrap and allow to marinate for at least 30 minutes
before serving.
To make the burgers, place all the ingredients (except the oil) in the blender and pulse four
to five times until just combined. The mixture should be chunky.
Form the mixture into four patties and place on waxed paper.
Heat the oil in a skillet over medium-high heat. Carefully slide the patties into the heated
skillet and cook for about 4 minutes on each side or until heated through. Serve on buns
with Quick Pickled Cukes.
Pork Burger Sliders with Tangy Barbecue Sauce
serves 4
We are big fans of sliders in our house. Is it because they’re so cute? Because we feel like
we’re eating more? I’m not really sure, but we love them. In these sweet little gems, pork
and beef are complemented by the smoky taste of bacon. Some cheddar and onion are
thrown in. And don’t forget the homemade Tangy Barbecue Sauce that tops these babies—
you’re sure to become a fan, too.
