NEW YEAR’S GOOD LUCK LENTIL SOUP

Ingredients:
2 cups lentils, preferably pink, rinsed and picked over
8 cups water
4 slices bacon, cut into ½" pieces
1 medium onion, sliced
½ cup chopped celery
¼ cup chopped carrots
3 tablespoons chopped fresh parsley
1 clove garlic, minced
2 teaspoons salt
1 teaspoon dried oregano
¼ teaspoon ground black pepper
2 cups chopped fresh tomatoes or 1 can (14.5 ounces) diced tomatoes
2 tablespoons red wine vinegar

Directions:
IN A 5-QUART SOUP POT, combine the lentils, water, bacon, onion, celery, carrots,
parsley, garlic, salt, oregano, and pepper. Cover and bring to a simmer over medium
heat. Cook for 1½ hours.
Add the tomatoes and vinegar and simmer until the lentils are tender, about 30 minutes
longer. Taste and adjust the seasoning, and serve hot.

CONTAINS SEVERAL WHOLE-GRAIN FLOURS THAT ARE ALL AVAILABLE AT A WHOLE FOODS
STORE AND IN SOME SUPERMARKETS. THE ORIGINAL CONTAINS RED KIDNEY BEANS, WHICH I
HAVE ELIMINATED HERE. I USED TO GRIND THE LENTILS INTO FLOUR, BUT IN THIS VERSION I
COOKED THEM TO MAKE THE BREAD A LITTLE EASIER TO MIX.
