Ingredients:
1 cup finely chopped green cabbage
½ cup shredded iceberg lettuce
½ cup shredded carrot
2 green onions (scallions), finely sliced
2 tablespoons light brown sugar
1 teaspoon dried oregano
½ teaspoon cayenne pepper
½ teaspoon salt
3 tablespoons red wine vinegar
3 tablespoons olive oil
Directions:
IN A LARGE BOWL, combine the cabbage, lettuce, carrot, green onions, brown sugar, oregano, cayenne,
salt, vinegar, and oil and toss to mix. Taste and correct the seasonings. Serve with the pupusas as a relish.
The slaw will keep, tightly covered, in the refrigerator up to 3 days.
Makes about 2 cups

YOU CAN FIND DRIED ANCHO CHILES IN THE INTERNATIONAL SECTION OF MOST
SUPERMARKETS. THE CHILE ITSELF IS MILD, BUT THE SEEDS ARE SPICY. THE FLAVOR OF
ANCHO CHILES ROUNDS OUT THE DISTINCTIVE FLAVOR OF THIS SOUP.
