AVGOLEMONO SOUP

AVGOLEMONO SOUP

Ingredients:
6 cups richly flavored chicken stock, preferably Two-for-One Chicken Stock
½ cup short-grain rice
2 large eggs

Directions:
Juice of 2 lemons (6 tablespoons)
Salt and ground black pepper
2 cups shredded cooked chicken
BRING the stock to a boil in a soup pot over high heat. Add the rice, reduce to a
simmer, and cook until the rice is tender, about 20 minutes.
Beat the eggs in a medium bowl until light yellow. Add the lemon juice and beat until
incorporated. Slowly add a ladleful of the hot broth to the eggs. Repeat with 2 more
ladlefuls of hot broth. Pour the egg-broth mixture back into the soup pot. Season with
salt, pepper, and more lemon juice to taste. Add the chicken and cook until heated
through. Serve with more pepper.
