Cardamom Almond Scones

Ingredients:
3 cups all-purpose flour
1 cup chopped almonds
½ cup sugar
1 tablespoon baking powder
1 teaspoon freshly ground cardamom seeds
2 sticks (8 ounces) cold butter, cut into small pieces
3 large eggs
½ to 2⁄ cup plain yogurt (fat-free, 2%, or whole-milk) or buttermilk

Directions:

PREHEAT the oven to 400°F. Lightly grease a large baking sheet or line with parchment
paper.
In a large bowl, combine the flour, almonds, 1⁄ cup of the sugar, the baking powder,

and cardamom. Using a pastry blender, two knives, or a pastry fork, cut in the butter
until it is in pea-size pieces.
In a small bowl, mix together the eggs and ½ cup of the yogurt or buttermilk. Add it to
the dry ingredients and blend quickly, just until the dough comes together, adding a bit
more yogurt or buttermilk, if needed.
Using a large ice-cream scoop or ½-cup measure, scoop the dough into mounds and
place on the prepared baking sheet, about 3" apart. Sprinkle the mounds of dough with
the remaining sugar and press them down lightly.
Bake until lightly browned, 10 to 15 minutes. Transfer the scones to a rack or place
directly into a serving basket. Serve warm.
