Turkey Avocado Rollups
Ingredients:
4 slices thick cut turkey breast
1 ripe avocado, peeled and pitted
1 tablespoon lemon juice
4 cherry tomatoes, rough chopped
Freshly ground black pepper, to taste
Directions:
Put the avocado and lemon juice in a bowl and mash thoroughly with a fork.
Gently add in the tomatoes. Season with freshly ground black pepper to taste.
Spread the avocado mixture on the turkey slices and roll up.
Serve and enjoy!

Makes about 2 dozen
