High Fiber Primal Cookies

Ingredients:
2 cups almond meal
1/2 cup ground flax seed
1/2 cup unsweetened, shredded coconut
1/2 cup raw sunflower seeds
1/2 cup raw pumpkin seeds
1 tablespoon cinnamon
1 teaspoon baking soda
2 large, cage free, organic eggs
1/4 cup pure maple syrup
1 tablespoon pure vanilla extract
1/2 cup coconut oil

Directions:
Preheat oven to 325 degrees.
In a large mixing bowl, sift the dry ingredients, including the seeds. In a
separate bowl, combine the eggs, vanilla, maple syrup and coconut oil.
Fold the wet ingredients into the dry and stir until well mixed.
Drop the batter by the tablespoonful onto a parchment-lined baking sheet,
approximately 2 inches apart.
Bake for 15 minutes, remove from oven and cool completely before serving.
Raspberry Muffins
Serves 6
Raspberries add tart flavor and a chewy texture to these hearty muffins.
Raspberries are in season in early summer, and again in fall. They are highly
perishable, though, and should be refrigerated and stored within a day. Substitute
frozen raspberries if you like, but don’t thaw them before stirring them into the
batter.
