Sweet Potato Mash With Pecans
Ingredients:
3 large sweet potatoes, peeled and cubed
1/2 cup butter, softened
2 green onions, chopped
1/8 teaspoon ground cinnamon
1/4 cup toasted, chopped pecans
Freshly ground black pepper, to taste
Directions:
Bring water to a boil and cook potatoes until soft enough to mash in a large
pot.
Strain the potatoes and put them back in the pot. Add the butter and mash until
butter is melted completely and potatoes are smooth and silky. Season with
freshly ground black pepper to taste.
Add onions with the cinnamon and mix completely to ensure the cinnamon is
dispersed consistently.
In a small skillet over medium heat, toast the pecans. When finished, add to the
potatoes.
Serve warm.
