Sesame-Chive Vinaigrette

Sesame-Chive Vinaigrette

Ingredients:
2 tablespoons chopped fresh chives
¼ cup chopped fresh cilantro
1 teaspoon chopped fresh peeled ginger
1 garlic clove, chopped
1 teaspoon fish sauce
1 tablespoon toasted sesame oil
½ cup pure olive oil
3 tablespoons seasoned rice wine vinegar
1 tablespoon low-sodium soy sauce

Directions:
Pinch of kosher salt
10 twists (¼ teaspoon) freshly ground black pepper
1. Combine the chives, cilantro, ginger, garlic, fish sauce, sesame oil, olive oil,
vinegar, and soy sauce in a blender or jar with a tight-fitting lid.
2. Shake the jar vigorously, until the vinaigrette is emulsified.
3. If the mixture is too thick, add more vinegar, 1 tablespoon at a time.
4. Season with salt and pepper. If storing, shake to re-blend before using.
Chef’s Note: An immersion blender works well here, too.
LEMON-THYME VINAIGRETTE

Here is another simple vinaigrette to bring amazing clean and pure flavor to many
dishes or salads. I use fresh thyme from my kitchen garden in this recipe. It serves
as a sauce for roasted cod, too.
