STEEL-CUT IRISH OATMEAL

Ingredients:
1 teaspoon vanilla extract
⅓ cup steel-cut oats
1 tablespoon organic butter
1 teaspoon Vermont maple syrup
2 tablespoons heavy cream
¼ cup dried cherries

Directions:
1. Heat the milk and vanilla in a saucepan over medium heat. Bring to a simmer.
2. Add the oats and bring back to a simmer. Reduce the heat to medium low and cook
for 30 minutes
3. Add the butter, syrup, cream, and cherries. Stir until well mixed.
Cook’s Note: Oatmeal is a great canvas for additional healthy ingredients, such
as yogurt, walnuts, flax seeds and fruit. Make a big batch, then portion and freeze.
If you like the cherries to be plump, add them to the pot of cooking oatmeal about
five minutes before finished to absorb some moisture.

This is a delicious and healthy twist on the classic chicken salad. I use the meat of
ripe avocados in the salad; then serve it in the scooped out avocado shell. The
crème fraiche instead of store-bought mayonnaise is the secret to this recipe.
