Ingredients:
2 pods cardamom
2 teaspoons (4 g) cumin seeds (not ground)
1 teaspoon (2 g) coriander seeds (not ground)

1 stick cinnamon
3 whole cloves
2 tablespoons (15 g) spicy chili powder (paprika or chipotle)
1 tablespoon (5 g) unsweetened cocoa powder
1 tablespoon (18 g) salt
2 tablespoons (30 g) packed brown sugar
Directions:
Gently toast the cardamom, cumin, coriander, coffee, cinnamon, cloves,
and chili powder in a dry skillet (without oil) over medium heat. Cook
4 to 5 minute or until spices become fragrant and begin to smoke.
