Apricot Tart
Apricot Tart
Ingredients:
2 ½ cups of walnuts
1 ½ cups of pitted dates
2 cups dried apricots, sliced ¼ inch thick
2 tablespoons agave nectar
1 cup orange juice
½ tsp cinnamon

Other Options to Consider: If you are allergic to walnuts feel free to substitute for any
other nut you like or are not allergic to.
Steps:
1. Make sure you purchase the pitted dates, these are the dates with the pits removed. If
the pits are still inside the dates, remove them and then place the dates in a food
processor or blender with the walnuts.
2. Process until well mixed and ground, but not smooth, about 40 seconds. It should be
coarsely textured when done.
3. Press evenly into a 9 × 9 inch glass baking dish.
4. Cover and put in refrigerator while making the filling.
5. Slice apricots about ¼ inch thick, and cook in a skillet with agave nectar, orange juice
and cinnamon on medium low heat, until apricots become tender, and liquid is
syrupy, about 10 minutes.
6. Remove apricots and syrup from hot pan and let cool in bowl for about 30 minutes.
7. Spread evenly over crust. It can be served right away or chilled. Make sure you store
tart covered so it does not pick up moisture from the refrigerator.
Lemon Pudding
